Chicken Mango Curry is a popular Sri-Lankan main dish that is enjoyed around the world. A very fragrant curry, with a sweet strong mango flavour and a robust coconut base.
Cooking Instructions
Heat 1 teaspoon of vegetable oil in a saucepan on medium heat.
Add 1kg of chicken to saucepan & brown.
Cook on medium heat while stirring until partly cooked.
Add contents of the sachet, simmer for 1-2 minutes.
Add 300ml of coconut milk & stir through.
Simmer on low heat until sauce has thickened & meat is tender. Serve with rice & accompaniments.
